Elevate your lunches with this delightful Caprese Toastie, bursting with the flavours of a European summer. Enjoy the simplicity of sweet tomatoes, fresh basil and mozzarella melding together in a crisp, golden delight. For those who love greens, you could also add some rocket or baby spinach to this toastie.

Ingredients:
- 2 slices sourdough, or bread of choice
- 1 tbsp pesto, we used one heaped tbsp
- 50g (1.7oz) mozzarella cheese, 2 slices
- ½ tomato, sliced, we used a roma tomato
- 5 basil leaves
- 1 tsp balsamic glaze
Method:
Spread the pesto onto both pieces of bread.
Layer on the cheese and tomato slices. Season with sea salt and black pepper. Place a few basil leaves on top and finish with some balsamic glaze.
Place the other piece of bread on top, pesto side down.
Toast in a sandwich press for 4-5 minutes or until golden brown.
Slice in half and serve.
